芥花籽油是一种经过改良的菜籽油,其中“芥子油苷”和“芥酸”这两种成分含量很低,又叫“双低菜籽油”。传统菜籽油中的“芥子油苷”分解产物能干扰甲状腺素合成,导致甲状腺肿大。“芥酸”在动物实验中显示会损害心脏。虽然通过食用油摄入的芥子油苷和芥酸总量不见得对于健康有多大危害,但传统菜籽油对健康没有好处。
